After receiving the lobsters and you aren't ready to cook it yet? Place the lobsters in the refrigerator, they should stay alive for up to 24 hours. If possible place them in a plate and wet a paper towel or damp towel to keep them moist and cold. Leaving the lobsters without a damp towel can sometimes cause their gills to dry out.
Remember to take off the rubber bands before steaming them, sometimes the rubber band creates a bitter taste.
Steaming lobsters are preferred over boiling. 8 mins for the first pound and 2 mins for each additional pound.
The most humane way to kill a lobster is to take a knife straight between the eyes and cut down.
Female lobster tails are wider than male lobster tails. Female lobsters during the spring will have roe in the tail and body.
